Just plug the Xylotex into the parallel port, and spend $5 at Mouser or Digikey for the Molex connector that plugs into the Xylotex an gives you access to the extra pins.
You don't really need a breakout board.
I have a SuperPID, hall effect home switches, and auto zero plates wired directly to my Xylotex. The only thing I had to do was add a pull up resistor for the auto zero plates.
For jogging, try an XBox 360 controller or a Shuttle Pro. Neither need the parallel port.
