Default Cnc plasma ( water cooled or air cooled )

I've chinese plasma cutting machine. I'm new to plasma cutting. I've a question how to decide that i should use air cooled tip or water cooled plasma tip ?
I should use water filled up in my table 'pictures attached ' or my table should be dry ?
I tried to cut 3mm mild steel at 45 amps and 3000mm per minute and it damaged my table grill .
    I'm really confused.

My plasma torches were always air cooled. Water cooled sounds like a good idea, maybe complicated tho. The grill under the sheet is expendable, expect to replace the slats occasionally.

While cutting 8mm mild steelsheet with plasma, cut is at angle of 45 degree from 2 sides while other 2 sides are at 90 degree. How i should make 45 degree to 90. Current is 100 amps and speed is 500mm/min.
