Maple, cherry, mahogany. Most hardwoods will cut much better than pine.

I'm pretty new to carving and whittling, I've whittled several little pendants and have done some relief carving. I can't seem to transition into making something 3D, I attempted to do an owl and for the life of me couldn't figure out how to go about doing it. I drew the front and the sides and back onto the wood but as soon as I started chipping away at it, I couldn't imagine how to form the shape. I ended up with a lumpy piece of wood that resembled nothing and gave up, I'd like to try again but could do with some tips. I'd appreciate anything you've got.
