No it's not common to have Acme taps around. I have a couple I bought for specific jobs.
I'm designing a small stainless steel vise that will use 6mm or 8mm lead screws (1mm - 2mm lead and pitch). (Since I'm an amateur machinist, I'll be ordering them to be machined by you guys.) Is it common for machinists to carry ACME lead screw taps or do I need to design it to accommodate the common lead screw nuts that can be purchased?

Anything made by any competent machinist will basically cost 100$ plus 3-4 x the cost of an equivalent stock part.
The machinist made part, *without* specifying any tolerances and accuracies will be around 0.03 mm +/- in basic dimensions and accuracies and features.
This is about 2-5x better than most stock parts.

I could probably make a nice 8 mm leadscrew, on my cnc retrofit lathe, with industrial servos and stuff (high end).
By grinding the final pass, the screw would have excellent finish and excellent consistency === accuracy.
It would probably take me a day.
As such, I would probably want 400$ for the work.
And this is at the very low end of the scale.
A mcmaster lead screw might cost 20$ for 10 cm length (rolled, not accurate).
THK or Misumi or Rexroth might cost 200$.
Hiwin or similar grade HA for high accuracy might cost 800$.
Mine would be nearest the HA accuracy and finish, but not quite there.
