I'm trying to hire a granite/marble countertop business in Ct to mill some marble memorial tablets for me. They involve a lot of v-cut text and a few sculpted relief details in some areas.
The counter place has a brembana maxima 5 axis mill with Fanuc controls and currently use a CAM software called "EASYSTONE" which is great for countertops but can't seem to handle the iges and dxf files I'm feeding it. The files consist of text outlines I exported from adobe illustrator.
After about a week of trying to get this EASYSTONE CAM to work I'm thinking of helping them purchase a CAM that might fit my project's needs better. I've looked at VECTRIC's Vcarve Pro and Cut3D softwares. But the truth is there is so many CAM packages out there I have no idea what to choose.
Any advice would be greatly appreciated.

Vcarve is good. I have only sampled it. But it has good video tutorials. Instead of buying software and having to learn to use it, you might consider just having someone program it for you for a fraction of the cost and no learning curve on your part.
