Get some large ones for roughing-out (as big as your spindle will accommodate) and small ones for finishing (small enough to get into the smallest detail you want to carve.) I like the tapered ball endmills that Precisebits makes; they're strong enough not to break and have a long cutting length, but give you the effect of a 1/16" diameter tool for detail:
