There is a plug in called "Grasshopper" that may be what you're looking for. Rhino is not strictly a history based modeller. It can 'a bit' but it's not variable driven like you are asking.

Is there a way of simply changing key data in a 'completed' model so that at the press of the return key a new model using the new key data is produced?
like variables in programming. eg read new a....z's then do it.
If not 'sensible question' then ignore.

Is use Grasshopper extensively to generate parametric models in Rhino. Just type "grasshopper" into the command line and start exploring.

But be warned. Grasshopper isn't as easy as changing a value to generate a new model. While it's possible, it certainly isn't a one button solution.
