Newbie- Any 2Dprofile tutorials around?

Hello,
I have been using a different CAM program for 3 years now. I am not happy with it. I am hoping to change over two MadCam as I use Rhino for all of my modeling.
A couple of questions.
I am working through the demo and am wondering how
to setup my profile cuts. I have figured out how to grab curves off of surface edges for profile boundary, I am just not getting how to set up the cuts in space/depth relative to 0/#of passes/finish pass. I build guitars and I do most of my zeroing off of my machine table.
Also how does one go back into "2D cut" after the fact to change settings/parameters? So far I have been deleting toolpath layer and starting over.
Here is a model of what I am trying to get a profile cut on. I am using a .5" ball end for profile and planer contour so I need to get tool to run .25" below part.

You don't have to delete toolpaths, only the paths visible (not hidden) when you post process will be the ones post processed. I have numerous paths at the same time. Always.

It is making much more sense to me this morning. The cut setup process is fast, I think it kind of threw me off.
