It would take writing a book here, to tell you everything you're asking. The manuals are available for download, right on their site:

I have been a manual machinist for 8 years and now have the chance to move onto a haas hs1 if I can catch on quickly, but I need help. Can someone give me a walk through of a part setup on this mill? All tools and program loaded already. Mainly just setting the offsets and touching off with the tools. And maybe a explanation of the offsets and exactly what each one is such as the workpiece offset. Thanks to anyone who will take the time to help me out.

Thanks I found all that I needed to know there.
Yeah maybe my first wont be to expensive. At least my first few jobs are on delrin which should be more forgiving.
Tell that to my formerly pristine vise with a nice hole in it. Running plastic (forgiving), ran the endmill right through it into the vise.
Don't let them rattle you -- "now have the chance to move onto a haas hs1 IF I can catch on quickly". My caps.
