Is there a way to select the type of material you're cutting on a VF3 or VF8?

No. It's up to you to decide speeds/feeds based on material you are cutting and type of tool you are cutting with,

On a VF5 and VF6 you can push help twice and pull up some calculators. On of them has apalce for entering feed sdna sppeds to see SFM and feed rates. On that page you may delect from a variety of different materials and it will give you a suggested list of SFM and feed rates. Warning those are on the very hgh end because things like the ridgidty of your set up and tool are not factored in. So stay at the low end or below and work you way up.

I have been machining for 32 years but I still find this page useful. It makes it easy to type in RPM and FEED in IPM to see just how fast I can push it or to find my ideal feed and speeds. Better to keep a good tool life than rip into the work and spend half your day changing tools. Just find the right balance. Time will give the ability to know where to start. Look at your chips, part finish, is there heat build up?, listen to the sound of the cut. All of that will someday let you know how fast to go without anybodies help.

Also, if you have Intuitive Programming System (IPS) you can set it up there.
