The manuals are awesome. I took them home on a Friday and was making chips on Monday. You can get printed ones from lulu.com or you can pm your e-mail address and I can send you the pdfs. Also if you have a maintenance package (assuming you own Gibbscam) the have video tutorials on Gibbs Online. If all else fails you can shell out 400.00 a day to a reseller to train you.
