Does anyone know if there is such a thing as 3D waterjet cutting ? Have a unique part and material combination that doesn't play well with thermal cutting because of potential deformation from localized heating.

Yes as stated. Keep in mind there are a huge amount of consumables in water jet cutting, even high pressure lines. The sales guys will try and make it sound not that bad, it really is.
