Buy me a Beer?

Have not done copper for a while, it's a gummy material

Carbides running too fast tend to push up major burrs and not slice it off.
Use Steel speeds and feeds, with extra sharp cutters, (HSS or Carbides for aluminium)
For coolant - some suggest kero, something to stop chips sticking,

for example see

Don't know about laser, especially with copper.
waterjet ?? plasma may melt the copper

Depends on quantity, accuracy, etc. required, or the details that need machining ?

Large quantity - could possibly be stamped and / or folded leaving hole/s to drill maybe ?

Just throwing other options up in the air

Waterjet

You may give waterjet a shot. I cut 1/16 (or 1.5875mm) about two weeks ago with one and it cut beautifully.

Plasma will do a decent job on this thickness of copper....although you do not mention your tolerance requirements and size and features required on the parts.

Waterjet is known for being able to produce tight tolerances, we stay within a few thousandths of an inch. Machine prices are pretty steep but cut prices vary with runtime. 2mm copper wouldnt take very long to cut.

I dont know about purchasing a waterjet with such a small table, I have heard of 4'x4' tables, but not much smaller than that. If you are just looking at having a few parts made, you can send me some drawings and see if that's something we could cut.
