The speed of the engraving is changed after you select 'output selection'. This will take you to a new page. The speed for engraving is listed on the right hand side and is called "CARVE". Of course, a lower number decreases the speed and the higher the number the faster.
The depth of the engraving is set by changing the power output via the control panel on the machine. If you are engraving at a slow speed, the more power you dial in from the front panel, the deeper the cut.
Maybe someone else can help with the 'output class' as I have no idea. On my machine, it is set at 3.

3.1.3 Class III Lasers
Class III lasers and laser systems (medium power) produce radiation that can cause eye damage when viewed directly, or when a specular reflection is viewed. A diffuse reflection is usually not a hazard.
