I am building a 5' x 10' plasma table with large Nema 23 stepper motors. Should i use shielded cable to the motors? Has anyone had any issues with using unshielded?

The motors and their drivers do not normally require shielded wire. However the motor wires can generate some electromagnetic noise so if sensor wires are run next to motor wires the sensors may pickup some noise.
I used unshielded wires on my machine on 2 motors and shielded wire on the other motor, not for any particular reason it was just the wire I had.
If you are purchasing multicore wire, or if you will have sensor wires running near motor wires it's just as easy to buy shielded multicore wire.
Required? No, but using shielded cable will reduce the chance of interference. Since interference problems can be some of the hardest to troubleshoot and shielded cable not that much more expensive than unshielded, I'd use it.
