i have 3 powermax 2 bipolar parallel
double stack steppers rated at
35v 3.1amp, would the g540 work
with these. what size power supply
would be best.

The Keling KL-350-48 48V/7.3A power supply is a good match for the G540 with your stepper motors and the price is very fair.
