Stepper motors have no closed loop feedback for position control. Missing steps will cause errors in the size of the object being cut. Servo motors have position feedback in closed loop arrangement. There are encoders available that can be added to dual shaft stepper motors to give something akin to closed loop operation. The encoder requires a different control board for operation.
Servo systems are more expensive.
