    its only low cost until you try to find a flat surface the size of your extrusions....

    That is a design feature in 80/20.
    when you mount a single object to them, they flatten out right there to help hold the item in place along the length of the slot. When a full-length item is mounted, they become flat along the slot too. As in a linear rail.
