Aluminum foil, folded to the thickness. But I ended up not having to shim on mine. I spent at least a week trying to get better and better.

Need to tram X. Does it matter what shim stock type to use, plastic or metal?

I would use metal shim stock as it is more rigid, easier to slip into place, and cuts your fingers.
Yep! I use old feeler gauge blades and they do tend to bite! You can pick them up cheap at Harbor Freight, etc. I wrap tape around the free ends to keep from accidental surgery.

Go buy a couple cheap sets of feeler gages. They make excellent shim stock of varying thickness after you take the packs apart. I have a drawer with a bunch of them. I've been known to go into Harbor Freight and buy every pack set they have on display.
I would NOT use plastic. Just about all plastics will "flow" over time under pressure.
