Do you read tutorial "ArtCAM sculpting masterclass"(making face from photo)?
I think that it's very difficult to make good model using only Photoshop. I use 3d software to make model and than import 3d model into ArtCAM.Result you can see here.

Models which you've seen are modelled in 3ds max and than imported into Artcam in stl format. I can send you some of these reliefs if you give your e-mail adress. You can use any 3d software including free ( Blender)

For that "pheasant" I just used "picture it! 9" Which is vary basic. I wouldn't even recommend it considering Corel or Adobe are so much better. Checkout "Blender" http://www.blender.org/ An "alpha-map" works great for converting to relief. There's a pretty steep learning curve with it. But the results can't be denied. Doesn't really help for converting a picture. But as far as modeling its great. Good luck.
