What version are you running? Right click,then attributes, then choose. Ver 21

1. Select the Entity or Entities that you want to change.
2. Then right click in the Workspace and click on Modify Attributes.
3. Select the Attribute you want to change and a dialog will pop-up with the available options.
4. Select the new color, line style, etc. and the dialog will close. The entities will then be modified.

How about changing the line thickness? I can only make changes after I draw the line, correct?

You can change the color and linestyle as you go if you want.
In the bottom right hand corner(but a little to the left) of the screen you will see a button that contains the current drawing color. If you click that button you can change the active drawing color. To the right of the color button is a linestyle button, that to can be changed.

New entities will be drawn using the attributes you have selected.

Did you know that you can set the system up different colors Lines, Arcs and Points, Solids, Dimensions and Toolpath?

Click on Preferences, then Settings Part.
In the Display pane you will have a button and color field for Toolpath, Dimension/Text and Solids.
Click on the button and change the color to whatever you want.
When you start drawing you will see that the entities take on the assigned color.

The line thickness can not be changed in Version 22 and 23. Is there are particular reason you need this?
