What kind of lung protection is needed for carbon fiber machining? I currently just wear a dust mask and use a vacuum to collect as much as possible. Also the dust can highly irritate my skin, even when wearing sleeves, any suggestions?

CF dust is very fine. Consider using a respirator like you would for painting instead of dust mask. A finer than usual filter on your vac would also be a good idea.
When you clean up, us cold water as this will help keep the pores in your skin closed. This will cut down on the amount of CF dust that clings to your arms.

I used to work in a fiberglass/carbon fiber shop. The best protection for your lungs is a respirator fitted with the proper cartridges. To keep from itching, a tyvek suit is the best but baby powder does wonders for your arms and the back of your neck.
