I believe you can set the stepdown (how deep each pass will be) in the 'Cut depth' field of the V carve toolpath settings.

By squared of do you mean that the delicate parts of the carving gets knock off (break) of else... white ceedar is quite easy on knocking off corners... though it smell good!
