I started like you. I collected old/broken printers from everywhere. The motors as I can see in the pic are too small and they are 7.5 degrees step, not great for resolution. You must look for printers like HP Laserjet series I/II/III or any OLD and big printer. There you find motors of 0.65-1 Nm.
Regarding the board I can not comment. It is SMT which means...difficult to salvage parts. Again, look for old printers....Usually, they have SLA series IC, which myself I did use yet, despite the fact I have a bunch of, but in some printers I found out also L297/L298. For driver and interface go to Phil's site and chose.. I started with discrete unipolar. It was useful just for learning. It has poor performance comparing with L297/L298 or A3977 you can find there, but it is cheap and easy to build, and it moves the machine. You can work with it.
